Apricot Soda

Hello from Arizona!


That's right, I'm away from New Jersey again and hanging out in the desert.  Did you know that Arizona gets monsoon rains in July?  Craziness.  It's also about 197 degrees here during the day.  Roughly.  That's what inspired me to share this soda with you today.


Last week I had a bowl of fresh, ripe apricots waiting to be made into something delicious.  Since I haven't made enough use of my shiny soda siphon yet, I decided to combine the two and make this apricot soda.  It was perfectly refreshing during the heat wave we endured last week in the tri-state area.  It was also pretty good with a scoop of vanilla!

Apricot Soda
From Homemade Soda

You can make this soda with a siphon or using seltzer, so you have no excuse!  Get yourself a pint of apricots and have a glass of soda.  You'll feel so much better after a drink, you'll feel even better if you throw in a scoop of vanilla.  Just saying...

For the Apricot Puree

8 small ripe apricots
1/3 cup granulated sugar
1 cup water

Pit apricots and cut into eighths.  Combine apricots, sugar and water in a 4-quart pot.  Cover and cook over medium heat.  Cook for about 10 minutes, or until apricots are very soft.  Pour contents into a blender (be sure to remove to plug from the blender lid) and puree until smooth.  Pour through a fine mesh sieve and into a large bowl.  Carbonate using your method of choice.

With a siphon (how I did it)

Combine entire batch of apricot puree with 2 cups filtered water.  Pour into a 1-quart soda siphon and place in the fridge for at least 2 hours (a chilled mixture will carbonate much better than a room temperature one).  Add CO2 cartridge and carbonate using your manufacturers directions.  Store in the fridge for up to 5 days.  Serve over ice.

With seltzer water

Combine 2/3 cup apricot puree with 2/3 cup seltzer water.  Stir to combine, add ice and serve.
