Nutella Sandwich Cookies

I can't believe how long I've been holding onto this recipe.  Especially since it has basically six ingredients and they are things that I always have in my pantry.  ALWAYS.




You don't have Nutella in your pantry?  Stop reading, go to the store and buy some.  Upon your return, you can make these cookies.  And you should.  They are super delicious.


Seriously.  These cookies are made with Nutella and then filled with more Nutella!  It's so crazy!  You use an entire jar of Nutella to make these bad boys.  C'mon, how could that be terrible?  Do it do it do it.

Nutella Sandwich Cookies
From Cooking Light

13-ounce jar Nutella
2 tablespoons butter, at room temperature
1 large egg
1 1/4 cup cake flour
1/2 teaspoon baking soda
1/4 teaspoon salt

Preheat oven to 375 ºF.  Line to cookie sheets with parchment paper or silpats.

In a large bowl, beat together 3/4 cup nutella with butter and egg.  In a small bowl, whisk together flour, baking soda and salt.  Slowly add dry ingredients to the nutella mixture.  Beat on low until combined and it forms a sticky dough.

Divide dough into 18 pieces (about 24 grams each, if you have a scale and want to weigh).  Roll each dough piece with your hands until it forms a smooth ball.  Place on the baking sheet about 2 inches apart.  Bake for 12 minutes.  Remove from the oven and let cool for 10 minutes on the pan on a wire rack.

Once the cookies are mostly cooled, cut in half horizontally with a serrated knife.  Fill each cookie with about 1 teaspoon of nutella.  Sandwich cookie halves back together.  Share with friends.  Or don't.  It's all good.
