Wilde in Chicago

Hello from the sunny Midwest!  Today I'm coming to you from my hotel room in downtown Chicago, sending you some tasty cookies rather than dinner.  Why am I in the windy city this fine Tuesday morning?  I'm off on my first official business trip!


The majority of my coworkers and I have packed up and relocated to Chicago for a week long conference.  I've been spending endless hours in dark rooms, watching powerpoint presentations and listening to scientists talk about their research.  There is a lot of biology, a little bit of chemistry and a whole lot of note-taking!  Let me tell you, my brain is fried!


 Luckily we've been able to enjoy the evenings away from the conference and in the great city of Chicago.  I've spent a lot of time here in the past, with going to grad school in Madison, Wisconsin, a mere two hours up the I-90.  It's been great being back in the city.  I've actually gotten to do a few things that I never had the chance to in the past.

It's been an exhausting few days, and I've got another day before the conference is over.  I think that I'll sleep very well on my way back to New York City tomorrow night!

Peanut Butter Rice Crispy Bars

Slowly, I'm coming back from the dead.  The cold virus that knocked me down like a freight train has been galliantly fought off by my immune system and I'm on the mend.  It has been rough, being sick at this time of the year, because this is the most fun time of year to cook!  This is the time of year that you can make everything red, green and blue, cover everything in sprinkles and frosting and feed your coworkers endless supplies of sugar.  They don't complain because it's festive.

I had big plans to make you lots of cookies the week leading up to Christmas, these bars are as far as I got.  While they were certainly delicious, I can't say that they are terribly festive.  Now that we've made it past December 25th and the presents have been put away, I suppose that you need some treats to celebrate the New Year.


Now that I'm living withing throwing distance to New York City, I've been getting lots of questions about what I'm doing for the big night.  Sadly, since I've been sick, we haven't made any plans at all!  A few years ago, before we were living here, boyfriend and I came to New York for the ball drop.  We figured, "You have to do it once!" 

Unfortunately, that year it was freezing cold.  I'm talking single digit temperatures as we approached midnight.  We had layered pants upon pants and sweaters under our jackets, yet still, we were cold.  There was no way we were going to sit still in Time's square for eight hours.  We would have been peoplesicles.  Instead we wandered the city from four in the afternoon until the ball finally came down to ring in the new year. 
We actually had a good view of the descending ball from our final position at the southeast corner of Bryant park.  The winds were even blowing in our direction and we got a nice shower of confetti and balloons.  However, moments after midnight, the crowds quickly dispersed and we hoofed it back to our hotel room as fast as our frozen bodies could take us.

This year looks to be a lot warmer here in the Big apple.  Does that mean that you'll see me in with the throngs of people in Time's Square?  Not a chance!  HAPPY NEW YEAR!  I hope you spend it with people you love, whether you decide to ring in the new year at eight o'clock or midnight.

Spicy Sesame Noodles

It's official everyone, I work at my company!  I know, it's an odd thing to say.  You might even be thinking "Wait Vicki, didn't you start your new job in July?"  First, thank you for remembering!  Second, yes.  I did start working at my job in the summer, but today I got my first set of business cards.


They are so pretty.  My name Dr. Wilde, Ph.D., in bold black lettering, tells everyone that I am an official member of the team!  Before I would go up to people and be all, "Hi, I work here!" and I would have no tangable proof to back up my claim.

Not any longer!  I work here now and I can prove it!  I can even back it up with a little information about what I'm working on.  I can spew fancy chemistry and pharmaceutical words and sound like a professional.  But don't let the business cards and fancy language fool you!  I'm still feeling my way around my new job. 


When I joined the team I was told that my first year would feel like I was thrown into the deep end of the pool.  I've learned to float and now I'm learning to swim.  Soon, I'll have all the goods necessary to back up that business card.  That little piece of card stock holds a lot of pressure and responsibility!  Here's to finding my sea legs!

Peanut Butter Brownies

Sooo, tis the season, right?  The season where we make nothing but cookies in our kitchens and get to real food as an afterthought?  Well, that's how things turned out in my kitchen this weekend.  These brownies are the product of a cookie-filled weekend at the Wilde household.  If you're already brownied out after last week, just tune back in on Thursday when I make some real food!


These brownies were the first of three recipes that I tried out this weekend.  I had big plans for these cookies.  They were to be packaged up and sent around the country as a part of the Great Food Blogger Cookie Swap 2011!!!  I have made these in the past and the note in my cookbook read "12/05/09 - Delicious!"  Thinking that I could probably trust myself, I got out of bed in the early morning hours of saturday to make these bad boys.


To give my past self credit, these brownies are delicious, they just won't be sent to my cookie swap friends.  You might be asking yourself why, especially if you are my secret cookie swap friends, but there is a good reason for it.  The delicious chocolate glaze that sits on top of these brownies didn't really set up.  If I mailed these delicious brownies to my secret cookie swap friends, they would be greeted to a big chocolate mess when they opened the box. 

So, if you don't need to ship brownies to anyone and you want an entire 15x10-inch pan of brownies all for yourself, make these!  And don't worry, I wound up with an awesome treat for the Cookie swap, I hope my secret matches like them!  You'll all have to wait until next Tuesday to see them!

Honey Roasted Peanut butter cookies

Just when I had thought that we were back to our normal sleeping schedule, daylight savings time rolls around.  Nuts!  I was just getting back to sleeping normal person hours again and now I'm waking up an hour early again.  At least I'm not waking up four hours early, so it should be a little easier to adjust, two days instead of an entire week!


After readjusting to Eastern standard time, I felt like I could finally get back into the kitchen this weekend.  It's been a little while since I was in front of the oven, so I needed a little help in deciding what to make.  Early Saturday morning I was looking through recipes and trying to decide what to make for the week and I thought that we could use some cookies.

I turned to boyfriend and asked what kind of cookies he wanted.  "Peanut butter."  Okay, plain and simple.  I've posted a few peanut butter cookies on here before and thought you could use something a little more special than just plain peanut butter cookies.  Then I remembered a recipe that I made a number of years ago while I was in grad school.  I remember making them so vividly because how long it took to make the recipe. 


This is not a complicated recipe, but as written in the cookbook, this recipe yields over eight dozen cookies.  Between making the dough, baking the cookies and icing them, it took an entire evening to make the recipe as written.  I wanted to make them again, but not nearly that many cookies.  So, I present to you a smaller batch, with a bigger boost of peanut butter.  I also thought we could use a little whole grain in our treats this weekend and swapped out half of the flour for whole wheat flour.

Mini Reeses Cupcakes

If my blog were a person, it wouldn't be my friend anymore.  You might be asking why this is the case?  Well, I kinda forgot it's birthday.  And I'm not just talking a few days late here.  My blogs birthday was way back in July!  I feel like such a terrible blog momma, how can you forget your own blog birthday?  I'll tell you how...

July 6th I began my new job.  While my new job came with the perks of evenings and weekends off (something that I haven't had in almost eight years), it also came with lots of new information that I had to cram into my brain.


June 30th I moved in with boyfriend.  After seven years of living long distance and making it work that way, boyfriend and I decided to give a go of it and live together.  While things have been working out grandly, he takes up a whole bunch of my time, in a good way of course.  We go out and do things on my newly free weekends.  Also, while I cook two or three times as often as I did before, I've been going for old favorites of mine, rather than striking out with something new each night.

July 1st I bought my first monthly rail pass.  A monthly rail pass to where?  Why, to New York City.  This makes it extremely easy to just hop on the train and head into the city on these newly free weekends.  What happens when you go to the city on the weekend instead of spending time in the kitchen?  You wind up celebrating your blogs birthday three months late.

I'm sorry blog, I love you!  Happy birthday!  Have some cupcakes!

Peanutty Noodles

I'm looking forward to this week because I get to have this for lunch!  You remember last week that I bought boyfriend NHL 2012?  Well, my plan worked!  I had a whole hour to mess around in the kitchen yesterday and make something to eat for the week.  I even made some quick and dirty ice cream, which I'll share with you all later in the week.


While boyfriend was happily playing Xbox hockey I was in the kitchen throwing together this pasta dish.  It literally took me ten minutes to take this dish from fridge to Gladware.  All you have to do to prepare this dish is boil some water!  I have had this cookbook for a few years now and haven't cooked nearly enough of the recipes.  This weekend I made two of the recipes in thirty minutes!  I think that I'll be making a few more of Nigellas dishes because I sometimes want a really quick dinner when I get home from work.


Sunday was a good day for all in the Wilde household.  Boyfriend beat some kid over Xbox live and I got to make lunch for work.  Happy people all around!

Peanut Butter Nougat Bars

It's Friday, Friday, Friday...  I'm sorry to those of you who now have that song in your head.  Those of you who don't know what I'm talking about should head to YouTube and search "Friday."  Go ahead, I'll wait... 


There we go, now everyone is in a good mood, thinking about which seat they'll choose and how they want a bowl of cereol.  I know, the song is super annoying, but it puts me in a good mood!  Fridays have taken on such a new meaning since I've started my new life in the real world.

Fridays are the last day of the week that I have to wake up at 5:30 in the morning.  Fridays are usually devoid of meetings at work and everyone heads out the door by 4:30.  Friday evenings are for relaxing with boyfriend, eating pizza, Chinese food or sandwiches.  Friday is payday too!  Woot, payday!  Friday also means that the weekend is upon us and I get to spend some time in the kitchen.


This weekend I expect to get lots of baking and cooking done.  You know why?  It's because I'm an awesome girlfriend.  While at lunch yesterday I stopped by the video game store and got boyfriend NHL 2012.  Something that he has been suggesting that I buy him for at least three months.  It was just released on Tuesday and he's very excited about it.  When I gave it to him last night he was all jazzed, then he told me I had to learn how to play...  Hmmm, that wasn't part of my distraction plan...

Ganduja & Caramel Candy Bars

Welcome to a new week everyone!  I hope that everyone is safe and sound from this weekends East Coast hurricane.  I am currently still in Buffalo, since my return flight to New York was cancelled yesterday.  That's okay though, it means I get to spend an extra day with my family and the puppies.  The crazy, lunatic puppies. 


They are currently running around the kitchen with me.  Busy romping around, playing with toys and biting each other.  Generally with one puppy you get used to keeping all of your precious things a few feet off of the ground.  This keeps them from geting little teeth marks all over them.  With two puppies, you have to keep up with the nibbling on things and a constant puppy fight.


These puppies are totally spoiled, with more toys than I had when I was little.  There are even doubles of all the toys, so that they can each have their own.  The problem?  You guessed it.  One puppy wants what the other one has.  They will even taunt each other with toys.  One puppy walking up to the other an waving her toy around until the second puppy leaps at it.  Then it's an all-out puppy war over the toy, then the toy is forgotten and they just bite each other.  Puppy war!


According to the vet, they're just like little kids.  Unless one of them comes to you bleeding, they're just fine.

Peanut butter and Chocolate Chip Ice cream


The summer of 2008 is fondly remembered as the lost summer, at least in my mind. 2008 was my last year of grad school and the summer of 2008 was the summer of my thesis. I defended my thesis in late august which meant that I spent the many weeks and months before writing.


My thesis is a collection of over 500 pages worth of text, images and data. Lots and lots of data. I'd say it's over half full of NMR spectra, experimental protocols and mass spec readouts. This massive collection of my brilliance was no easy feat to pull together. I would spend all day working tirelessly in the lab, trying to finish my project before my D-day. I would then head home and take up residence at the kitchen table. I would write introduction chapters, edit Chemdraw slides and resize NMR files. Images would suddenly jump to the next page and I would try to keep data next to the relevant text. The sun would rise and set and I would be there at my computer.


The summer of 2008 was lost in a blur of thesis writing and chemistry doing.  Of course it was all worth it, in the end.  I'm now Dr. Wilde in the Kitchen and my PhD has allowed me to become gainfully employed.  So, while the summer of 2008 may have passed me by, the summer of 2011 is going to be mine.  Here I come weekends, get the beaches ready, release the summer blockbusters, fill my calendar with festivals.  I'm so ready!

Ohio Buckeyes

A Ted’s hot dog with a side of cheese. A stack of pancakes with a pile of crunchy hash browns. A Hershey bar and a jar of peanut butter. These are a few of my favorite things. What? You’ve never sat down with a chocolate bar and a jar of peanut butter? You should definitely give it a go. Chocolate and peanut butter is one of those quintessential combinations that so many people love. Well, most Americans. Seems like non-Americans can live their lives quite happily without a jar of peanut butter in the house.



I am a huge fan of the peanut butter and chocolate combo, so I’m not sure why it’s taken me this long to make this candy. If you are from Ohio, you know these candies as Buckeyes. They look just like the nut of the Ohio buckeye tree, just like horse chestnuts! (Seriously, have a look, it’s uncanny!) My roommate in grad school made something very similar to these and I loved them. In fact, I would sneak a few from the fridge when she wasn’t looking. They were so good! Why did I never make them myself?


So far in Candy Challenge 2011, I haven’t made something so simple and so delicious. The whole recipe took less than an hour (including chilling time) from start to finish. There is no boiling sugar, for once, there is no need for a candy thermometer and you don’t even need any fancy equipment. So get out your bowl, spoon and baking sheet.

Banana Mallow Cups


In the words of Rachel Zoe, these mallow cups are totally bananas. I mean, I die.


I’ve been having a ball making candies this year during my Candy Challenge. Originally I started off with simple things, taffy, truffles, marshmallows. After several successful batches of candy I’ve gotten the confidence to try more and more complicated things. These mallow cups are pretty complicated, but worth the time you put into them.


The original mallow cup is something that I don’t see everywhere. It’s a milk chocolate cup, filled with creamy marshmallow and a slightly crunchy top. I’m not really sure what that crunchy top comes from, but it’s delicious. When I decided to take on the mallow cup I wanted to do something a little different, hence the bananas!

I brought these bad boys into work and put them in our break room without a note. Before I could send out an e-mail, a good portion of them were already gone and my coworkers were confused. “What was in those chocolate things?” They asked me. My answer? “Bananas! Or Bananas and peanut butter.” I had decided to take half of the batch and fill them with banana fluff and creamy peanut butter, but I neglected to label them differently. Two coworkers, who got two different fillings, were arguing about what was in the cups. Both of them were right.


Either way, these mallow cups were bananas. In such a good way! Whether you decide to keep them simple and fill them with just banana fluff, or you take a hint from Elvis and add in some peanut butter, they won’t last long. Personally, I ate at least a quarter of the batch.

Homemade Butter Finger Bars

Happy Valentine’s Day everyone! I know that I’m a little late in the day, in fact it’s only still Valentines for the Western hemisphere. It’s plain old February 15th in Europe right now. Good thing that I’m giving you a non-Valentines specific treat! I spent the first half of my Valentine’s Day flying around the country. It’s a very exciting month in the Wilde household!



This weekend I spent packing up boyfriends house for his upcoming move to the east coast. We spent hours going through bins and bins of toys. Fabulous 1980’s toys! Everything from Ninja Turtles to G.I. Joes to Batman. It was a very Toy Story 3 kind of weekend, deciding what would move and what would be sent to the big Thrift store donation truck. Packing up old toys is hard! You get distracted and find yourself setting up the G.I. Joe base, when you should be deciding whether astronaut Raphael should be donated or not (donate).


So, while you may have spent your weekend heading to a romantic dinner or cooking something delicious for your favorite person, I spent it in a basement, playing with toys! Boyfriend was able to pick and choose his favorites and we set aside a big box (okay, five boxes) to take to the collection center. A big box (5) of G.I. Joe trucks and Batcaves, ninja turtle action figures and micro machines was on its way out of the house, so sad.


Fate intervened and a text message came to boyfriends phone. A friend saw us driving around town and was harassing boyfriend for ignoring him. A friend, with two kids. Kids who like toys! Perhaps boyfriends friend would like the toys? The return text message… Yes! Friend would love the toys! Hooray, the toys will have new kids to play with them! Such a Toy Story ending, everyone is happy. Except boyfriend, who wants to break open the boxes we packed and play with the toys.

Chocolate and Peanut butter Mousse Entremet

Welcome to a special Thursday in the kitchen! Why am I posting today? Because today is Daring Bakers reveal day! I have to say, when I originally read the challenge for this month, I was concerned. When I looked up ‘entremets’ on google, I found some pretty daunting looking pastries. Go ahead, Google entremets. You’ll find gorgeous looking French pastries with intricate designs and tempting fillings. Would I be able to complete this challenge successfully? Yes, I would.

The January 2011 Daring Bakers’ Challenge was hosted by Astheroshe of the blog Accro. She chose to challenge everyone to make a Biscuit Joconde Imprime to wrap around an entremets dessert.

My life has been a little crazy over the past month and I had to spread out preparation of this dessert. It took me an entire week, a few hours here and there, to complete this challenge. I can say that I am completely satisfied with my final result. Sure, there are imperfections, but I am amazed what can be done with the right directions. You too can perform like a pastry chef, without all that training.


The first step is to bake to Biscuit Joconde Imprime. When you say it, you must do it with a really bad French accent, it will make your day. Haw, haw, haw (French laughing). The imprime is where you can get fancy and creative. I decided I would get ready for Valentine’s Day and piped pink hearts into my imprime. (Check out some of the other amazing creations in the Daring Kitchen) You’ll see my step-by-step process of creating the shell of the entremets. Now you’re seeing where those fancy patterns come from, right? It’s so simple!


The next step is to get even more creative. What do you want to put in it? I had a massive number of ideas floating around in my head. A key lime mousse with a dark chocolate glaze, an entremets filled with ice cream and topped with meringue, a blackberry cream topped with lemon whip. Oh boy, the possibilities are endless! I decided to go with a personal favorite, Chocolate and peanut butter. Delicious. My entremets is filled with a solid chocolate mousse and topped with a lighter peanut butter mousse and finished with a bittersweet chocolate hat. From the mousse that I’ve licked from the bowls, spatulas and my hands, this is one amazing dessert. I don’t want to share… So here are the directions to make your own!

Peanut Butter Chocolate Chip Bars


Today is going to be a very good day. I know, this is a surprising thing to say on a Monday. However, this is the last day of work before I head home for the holidays. Winter lab shut-down, such a great time of year. This year will be especially sweet for me and my lab mates because we have all been working very, very hard. The past few weeks have been very crazy. If it were a day of the week that ended in ‘day,’ we were in the lab.

My friends out there who have been to grad school, or are currently in grad school, should understand this perfectly. Those of you who thought it was a good idea to get your PhD in the sciences, you know. When I signed on to go to grad school I didn’t realize that I was giving up my free-time/life for the next five years. Seven years now if you include my postdoctoral training! Luckily I like what I’m doing. If you are considering graduate school, or your PhD, consider how much you like other things. You know, fun things. Things that include going outside in the daylight. Things that include seeing people who don’t work in the same room as you do. Are you that dedicated? If so, c’mon in! Grad school is great!

If you’ve chosen to pursue your graduate degree, don’t worry. You’ll be coming to grad school with many like-minded people. Depending on your field will of course determine the number of “normal” people you’ll meet. In the hard sciences it goes this way, in order of increasing weirdness. Biologists, biochemists, chemist, physicists. Sorry physicists, you know you’re a little strange.


So, you’ll see that I put myself pretty high on the oddness scale. Don’t worry about me, I’m not that much of a weirdo and luckily neither are my lab mates. They are some pretty wonderful people, which helps with the fact that I see them approximately 60 hours a week (on a slow week). Today is the last day I have to see these people for almost two weeks. This is a good thing, because we are all running out of things to say to each other. We also think that punching each other is a good idea these days.

To avoid getting punched today, I’m plying my lab mates with sweets. Here are some peanut butter bars lab mates! Please, don’t punch me in the face.

Chocolate and Peanut Butter Macarons

There are some things that I have not been able to succeed at. Roller blading without looking like a starfish. Maintaining a sleek hairstyle while living on the East coast. Avoid meeting the other people that live in my building. Try as I might I just cannot manage to accomplish any of these tasks. I mean, I go rollerblading with boyfriend and he skates circles around me. Literally. He takes great joy in circling me like a shark as I stumble and try to maintain an upright posture. Is it so bad to use the trees as methods to stop? Why else are there trees on the bike path?


While living in Colorado I enjoyed month after month of humidity-free days. My hair never looked to good. In fact, in the two years that I lived in Colorado I never once got a haircut. It was so well behaved I was able to wash and wear. Run out the door without being concerned about the craziness that would take over my head later in the day. The East coast hates me, or at least my hair. I step outside of my apartment building and the little frizzies start to creep in. Just this morning a gentle mist in the air destroyed my perfectly straightened hair. Just the right amount of curl at the end. Then BAM! Humidity, blast.


But one thing was not going to beat me. I would succeed at the French Macaron! These cookies are the talk of the culinary world. Adorable little cookies, filled with decadent frostings, ganaches and jams. Walk by a shop that sells them and you encounter a rainbow of cookies. Do a Google search and you’ll find so many different suggestions and recipes. There are cookbooks about macarons being published every month (I have three!). Yet with all this information, there is nothing to do but throw yourself in the deep end and give them a go.


My first attempt was less than successful. The macarons rose like cookies. They were feet-less monsters. Yet I still filled them with peanutbutter and ate every single one of them. Yes, the texture was off, but they still tasted delicious.


My second attempt, armed with a new cookbook, was much better. Weighing out the ingredients and following the directions perfectly I was rewarded with cute little chocolate cookies. Shiny tops with a high foot (or pied, as the French would call them), my macarons were beautiful. And since I’m a sucker for the chocolate peanut butter combo (and I was too lazy to whip up a ganache at ten o’clock at night) I sandwiched them with Jif. Fantastic. Even better after sitting in the fridge for a few days.

Give these cookies a try. All you need in patience, and a good recipe to use up all those leftover egg yolks. I recommend making pie (more to come!)
